Here is a great left over Thanksgiving turkey recipe that I can thank my thrifty mother in law for. I must admit, at first, I doubted the whole idea, as I did all things "mother in law", but the old gal was right on target with this one. If you use your left over turkey for sandwiches and other family treats, you can still can. This recipe is all about the meat left over on the turkey bones.
In a large pot, my mother in law would place the disassembled turkey, water, an onion, garlic, and spices. She would simmer it until the meat fell of the bones with ease then cooled it down to remove the remaining meat to the pot, discarding the bones as she did. She would add any other left over turkey, along with chopped potatoes, carrots, celery, and a frozen package of peas and carrots. The pot would continue to simmer throughout the day.
When evening came around, she would take out the Bisquick, make dumplings and cook them in the pot per instructions. It was a great, warm winter meal that the whole family would enjoy.
Give it a try. It may become a new Thanksgiving tradition. Best of all, it feeds lots of family members that may be staying the whole Thanksgiving weekend to watch football. Bon Appetit.
